Kitchen Love

Simple math: no job=sweet freedom until sweet freedom=boredom. Enter hobbies to kill the boredom.

This week I have sufficiently revived almost every hobby I've ever had. So far tennis and cooking are tied for first place in being my new favorites. Today I made a yummy modified quiche lorraine that made for a perfect afternoon picnic! (too bad I spaced taking pictures of it, oh well, next time)

Quiche Lorraine
crust:
1 C flour
1/4 t salt
1/3 C + 1 T shortening
2-3 T cold water

mix flour and salt in bowl, cut in shortening, and then add one tablespoon of water at a time to the dough. mix together with you hands, you may need to add an extra tablespoon of water if your crust is dry. roll into ball, flatten, cover and refrigerate for 45 minutes. It's fine if you don't have the full amount of time to refrigerate, it'll just be a little bit flakier if you do. 20 minutes in the fridge is just fine though. Preheat oven to 425. Roll dough out and place in 9 inch pan, cover with foil and bake for 10 minutes. Remove foil, bake for additional 3 minutes or until golden. Decrease oven temp to 325.

filling:
6-8 slices turkey bacon
1 C mozzarella or swiss cheese
onion powder (approx 1/3 T)
4 eggs
2 T melted butter, plus enough milk added to it to equal 2 C liquid total
pepper (approx 1/4 t)

sprinkle baked bacon bits and cheese onto crust. In a bowl whisk together eggs, butter, milk, onion powder and pepper. Pour liquid mixture on top of crust. Bake 45 minutes, let sit for 10 before serving. I think these would be great in tart size too. Next time.

Mmm...I forgot how much I love having time to experiment in the kitchen!
